I can't find a button/switch in the interface that would remove a contact from the holding structure. It's clear how to add it (interface block "subsidiaries 1"), but how to remove it is not clear.

The universal block should contain the Parent Company or Holding Company field, where you can delete

To remove a company from the holding structure, you need to go to the card of the company you want to remove from the holding structure and clear the value in the "Holding company" field http://i.imgur.com/tnHjJ05.png , this field can be displayed in the universal contact interface block.
