You need to create a new stage in the BP return and set the action "Return the contents of the process to the warehouse" on it. Then open a closed order and go to the created status, after which the goods that were sold in this process will be returned to the warehouse.
As for the deleted order, you can restore it and follow the same steps as I indicated above.
