At the moment there is no setting that would remove the display of this field http://i.imgur.com/FCCc99z.png .
This field is displayed because the product has several price levels available in this drop down list.
Regarding changing the quantity of goods, you can specify the required quantity in this field http://i.imgur.com/XkeJV6W.png , after which, when you click on an empty space, the page will be refreshed and the quantity of goods will be updated.
