Editing improvements, prohibit editing of all payment fields except the process and the customer.

Good afternoon, we give managers the right to edit payments so that they can distribute payments across customer orders. However, unfortunately, situations arise when a person accidentally changes the account or even the amount. I am interested in an improvement that will allow managers to only change the process and client when editing or by some action in the process to move payments. Also, separately, I am interested in blocking payment editing by date, prohibiting editing all payments that were created 5 days or more ago, so that managers cannot change payment bindings in a month or two.
