Where do you want this to happen? In some kind of automatic action or when exporting products manually? Do you need to separate by sheets only the categories of the 1st level or everything in general? If you have 100+ categories, then Excel will obviously not make so many different tabs.

You can modify a new automatic action once an hour to do this. There it will be possible to add several sheets and for each separately set the conditions for unloading products and their columns. The conditions will filter by category, brand, filter selection and its value. In the selection of columns for uploading for each sheet, there will be main fields (name, category, brand, price) + additional fields + filters.
