Is it possible to set up such a scenario without modifications (if the products are not available in the main warehouse):
1) in the client's office, select products that are not in stock, but the client expects them;
2) send an SMS to the client when the selected products arrive at the warehouse?

Yes, you just need to create a process in which you could specify the customer and product.
Need 3 steps
- new
- In stock
- cancel
At the new stage, add a product and drop the setting into the stage action
"Change stage if there is enough stock"
and in the settings specify the stage "in stock"
and at the stage "in stock" - add the action of sending SMS. Everything, your functionality works)
