Unfortunately yes. There are many such actions and the values do not always fly off and not in all actions

We are in no way able to catch in consequence of what actions settings can "fly off" from actions.
Perhaps you "caught" the relationship after which actions this happens?

I didn't notice any obvious patterns. I can only guess: many of these errors appear when changes are made to exactly the same action, for example, a change was made to action "A", and the fields were cleared in action "B".
