And the columns should all be as detailed as the process? How would you understand that when forming a query, for optimization and performance purposes, grouping / summing queries are used, and your version requires enumeration.

This is an abstract judgment, I cannot provide you with exact data before implementation. Maybe everything will not be so critical. But you must understand that there will be a difference - to make 1 query summarizing orders or iterate over each order and make miscalculations.
