There is a variable with date type {|$customorder_datadostavki2|}
How to correctly write its format so that the mailing list contains a date of the form: day-month-year (for example, 12/02/2021)?

no way
You can only use the "Write value in additional field" action to rewrite the date in another field, using the formula [datadostavki2|Ymd] and send this field as a string in the message
